Viticulturists are specialists in the science and practice of grapevine cultivation, primarily for wine production, but also for table grapes, raisins, and juice. They manage every aspect of vineyard development, including site selection, soil preparation, vine planting, irrigation, pruning, canopy management, and pest control. Their decisions are closely aligned with climate patterns, terroir characteristics, and grape varietal requirements to ensure optimal yield and fruit quality. They play a pivotal role in shaping the sensory qualities of wine, as grape health and composition directly influence the final product.

Viticulturists collaborate with enologists, climatologists, and soil scientists to apply techniques that improve grapevine performance and sustainability. They often employ precision farming tools such as GPS mapping, aerial imagery, and sensor-based monitoring to track vine stress, nutrient levels, and disease outbreaks. Modern viticulture also incorporates organic practices, drought-tolerant rootstocks, and biodynamic methods to adapt to climate change and reduce environmental impact. They contribute to breeding programs aimed at developing grape varieties with improved flavor profiles, resistance to pathogens, and suitability for different terroirs.
